The Perfect Mother’s Day Brunch with the Overnight Sausage Casserole

other’s Day should be all about simplicity, and this wonderful dish can be put together the night before so that it is ready to bake for Mom’s special day. With a soft layer on the bottom, cheesy center, and then topped with flavorful sausage, she will definitely “feel the love” in the most delicious way!

Azure Rountree

8 slices white bread (crust removed and cubed) 2 cups shredded Sharp Cheddar Cheese 1 pound Jimmy Dean Regular Sausage (cooked) 2 cups Milk 4 large Eggs 1 teaspoon Dry Ground Mustard ½ teaspoon Salt teaspoon Pepper Non-Stick Cooking Spray Spray 9×13 inch baking dish with cooking spray, then set aside. Spread the cubed white bread on the bottom of the baking dish. Next, top the bread cubes with the shredded cheddar cheese. Cook the sausage until no longer pink, then sprinkle the sausage over the cheese. Combine the milk, eggs, dry mustard, salt and pepper, then beat the mixture together. Pour over the casserole. Cover with foil and place in the fridge overnight. The next day, preheat the oven to 350 degrees. Once the oven is ready, bake covered on the 3rd (middle) rack for 30 minutes. Remove the foil and bake an additional 10 to 15 minutes or until the eggs are set.
