Warm up this Winter with Cheeseburger Soup

Chilly nights call for a delicious soup to warm you up. Cheeseburger Soup is loaded with celery, carrots, onion and potatoes nestled in a creamy cheese sauce. This dish truly is comfort food at its best!

Cheeseburger Soup

¾ pound Ground Beef 4 Tablespoons Unsalted Butter ¾ cup diced Celery ¾ cup diced Carrots ½ cup diced Onion ¼ cup All-Purpose Flour 3 ½ cups Chicken Broth 1 ½ cups Whole Milk 2 ½ cups peeled & cubed Potatoes 1 teaspoon dried Parsley Flakes 1 teaspoon dried Basil ½ teaspoon Salt ¼ teaspoon Pepper 1 (16-ounce) box Velveeta Original Cheese (cubed) ¼ cup Sour Cream In a large heavy pot and over medium heat, add ground beef and cook until no longer pink, then drain the meat in a colander and set aside. Carefully wipe the grease from the pot and add it back to the stove along with the butter. Once hot, add the celery, carrots and onion. Cook over medium heat for 8 minutes while stirring. Next, add the flour and stir to coat the vegetables. Slowly pour in the chicken broth, then the milk. Add the cubed potatoes, parsley flakes, basil, salt, pepper and ground beef. Stir and bring to a boil. Once boiling, cover with a lid and reduce the heat to simmer for 55 minutes.

Remove the lid and add the cubed Velveeta Cheese. Cook while stirring until it is melted and creamy. Stir in the sour cream, then remove from heat and serve.
